There are special rules for Kashering the liver of a Kosher animal.

Once again, “Mah Nishtanah” – “Why is Koshering the liver different from the way we make Kosher all other meat?”

Well, it’s time for some “liver education”:

One of the major functions of the liver is to clean up the blood that circulates through the body – it is like the Grand Central Station of the bloodstream, and it’s thoroughly soaked with blood. So, it takes a lot more than salt to remove blood from the liver. Instead, the liver is broiled over a flame. Only the intense heat and exposure to the open fire will draw out all the blood.

Although there may be many benefits to the Kosher diet, the Torah doesn’t mention the reason for this Mitzvah. We keep Kosher because HaShem commanded us.

The prohibition against eating blood, however, is an exception. It is the only dietary law that has a reason specified in Torah: “Do not eat blood because the life of the animal (literally, the soul of the animal) is in the blood.”
